These are kind of like chocolate orange cheesecake cookies. We make them every Christmas.
Ingredients:
- 1/2 cup unsalted butter (room temp)
- 1 pkg of cream cheese (3 oz)
- 1/2 cup icing sugar
- 1 egg
- 1 tablespoon of orange rind
- 1 teaspoon vanilla
- 1 cup flour
- 1/2 teaspoon salt
- 6 oz semi-sweet chocolate chips
Directions:
- Preheat oven to 350 degrees. Line a cookie sheet with parchment paper or silpat.
- Beat butter and cream cheeze in a medium sized bowl with a handmixer until light and fluffy.
- Add sugar and egg and continue to beat until smooth.
- Blend in the orange rind and vanilla.
- Add flour and salt, blend until mixed.
- Fold in chocolate chips.
- Use a teaspoon (from the drawer, not a measuring teaspoon) to take thumb-ish sized bits of dough and drop them onto the baking sheet until full (about 2-3 inches should separate each drop).
- Bake for 15 mins.
- Repeat until it’s all used up.
